Pressed sushi made with fresh bamboo shoots heralds the arrival of spring
On Thursday, April 13, 2023, I tried making pressed sushi with fresh, spring-fresh bamboo shoots, a gift from a friend in Hokuryu Town! I slowly simmered the bamboo shoots with rice bran to remove the bitterness. I slowly soaked them in water, added seasonings, and simmered them in various ways.
