Pressed sushi made with fresh bamboo shoots heralds the arrival of spring

I decided to try making pressed sushi using fresh spring bamboo shoots that I received from someone who has been kind to me in Hokuryu Town!

Bamboo shoots are boiled slowly with rice bran to remove the bitterness. They are then slowly soaked in water, seasoned, and simmered to create a variety of dishes!

Freshly dug, crisp and tender new bamboo shoots!
You can taste the flavor and slight sweetness of bamboo shoots, and fully enjoy the taste of spring!!!

The vinegared rice for the pressed sushi is mixed with Nozawana dried baby sardines and ground sesame seeds, and topped with olive oil edamame and goji berries!

Enjoy the flavors of spring with this happy lunch featuring oven-baked king salmon and Spanish mackerel marinated in sake lees, accompanied by bunapi (white beech mushrooms) and egg soup!
