Friday, January 17th marks the start of the winter solstice (18 days before the beginning of spring).
As the seasons change and it's easy to get sick, eat red foods to ward off evil spirits and spend the time relaxing and calmly.
Mehari, turnip and salmon pressed sushi
On a day like this, you can enjoy the combination of Mehari (pickled takana), salt-koji-pickled turnip, smoked salmon and salmon flakes in this pressed sushi!

The rice is cooked with plum and kelp, and mixed with Nozawana dried baby leaves and sesame seeds.
Top with pickled radish and sprinkle a light sprinkling of gold powder.

Add in the orange flowers of the sunset and it looks like today is going to be a great day!!!
