We tried our hand at pressed sushi with fresh spring bamboo shoots given to us by a friend of ours in Hokuryu Town!
Bamboo shoots are removed from the water by adding rice bran and simmering slowly to remove the scum. They are slowly soaked in water, seasoned with seasonings, and stewed to transform them into a variety of dishes!
Freshly dug, fresh, shakkit-soft new bamboo shoots!
The flavor of bamboo shoots and a hint of sweetness, a perfect taste of spring!
The pressed sushi rice is mixed with nozawana chirimen & ground sesame seeds, topped with olive oil edamame and wolfberry seeds!
A happy lunch to enjoy the flavors of spring slowly and leisurely, accompanied by oven-baked king salmon & mackerel with sake lees, and soup with white beech mushrooms and eggs!
