The first fresh bamboo shoots of spring!

We thoroughly enjoyed the flavors of spring with bamboo shoot rice and stew.
Add bamboo shoots, carrots, dried daikon radish, and shiitake mushrooms to your rice dish!

Accompanied by simmered bamboo shoots with hijiki seaweed, carrot rapée, turnip pickled in sake lees, and red miso soup with akamoku seaweed.

Bamboo shoots grow at an incredible rate, said to grow several tens of centimetres a day.
