A magnificent ginger tree in the Nakajima family's natural garden!

Our neighbors, the Nakajima family, have a natural garden where they carefully cultivate a wide variety of vegetables and flowers.

A faint pink glow peeking out from the soil. This is the myoga ginger, a fragrant vegetable grown at our neighbor's Nakajima Natural Garden.

"It's crisp and has a delicious spiciness!" the couple said, sharing with us plenty of the fine myoga ginger they had lovingly cultivated.

We are truly grateful to the Nakajima couple for their kind consideration and warm heartedness as they spend so much time every day lovingly growing their flowers and vegetables!

As soon as I got home, I tried pickling myoga in sweet vinegar! I washed it thoroughly, boiled it briefly, and pickled it in sweet vinegar.

The time to harvest ginger is when the flower buds harden before they bloom and start to peek out from the soil at the base of the plant.

I crawled into a large clump of ginger plants and harvested the beautiful flower buds at the base of the plants.
