Monday, September 9th is the annual autumn festival of Shinryu Shrine in Hokuryu Town.
Every year at this time, our neighbors, Mr. and Mrs. Kitajima, make handmade sasazushi!
We were so grateful to receive a share of their heartfelt sasa sushi!

The Kitajimas visit nearby mountains to select and harvest sturdy bamboo leaves, which they then sterilize and store.
This pressed sushi made with pickled mackerel and salmon is refreshing, nutritious, and has excellent preservative properties thanks to the antibacterial properties of bamboo leaves and the vinegar used in the vinegared rice!
We savored it with gratitude for the bounty of autumn and the bountiful harvest, and prayed for good health!!!
