This year's winter solstice is on December 21st (Saturday) at 18:21 (From the National Astronomical Observatory)!
This year's winter solstice is said to be a special day, the most auspicious year for decades, when energy will reach its peak!!!
The rising sun on this day is called "Ichiyo Raifu" (the return of the sun), and it is said to be the day when yin reaches its peak and turns to yang, bringing good fortune.
Hokuryu Town Pumpkin & Red Bean Pressed Sushi
We enjoyed pressed sushi made with pumpkin and red beans, which is said to be appropriate for this day.
The pumpkin and red beans are from Hokuryu Town!!!
Mix pickled plums and Nozawana dried baby sardines into the vinegared rice of your pressed sushi!
A pumpkin salad made from mashed steamed pumpkin mixed with butter and spices is laid on top, and sliced cheese and seaweed are sandwiched in between, then pressed into a firm sushi roll.
Topped with stewed pumpkin, red beans, and sweet chestnuts!

Served with a salad of baby leaves and cherry tomatoes...
Praying on the sacred winter solstice
On the day of the winter solstice, enjoy pressed sushi made with nutritious pumpkin to bring good fortune and red beans to ward off misfortune, and feel full of energy!!!
At 6:21pm, I took a deep, slow breath and calmed my mind.
Riding on the rising tide of good fortune that is coming, I will continue to pray from my heart that Hokuryu Town, Japan, and the world will move towards peace, that Mother Earth will be filled with greenery, and that all living things will be enveloped in the great vibrations of happiness and shine.
